Jolie was born out of a long-standing friendship and a shared passion for food and community.
Fifteen years ago, George and Traci teamed up to open De Luca Food & Wine in Miami
Beach—a modern Italian restaurant that quickly became a local favorite. Though De Luca’s run ended when the building was sold, the dream didn’t stop there.
Years later, over a round of golf, George and Traci reimagined that magic. The result is Jolie,

With roots in South Beach, Jolie carries a sense of coastal ease and understated elegance reimagined for our Palm Bay community. Our approach to food is grounded in Italian simplicity, with a focus on fresh pastas, Neapolitan-style pizza baked in a wood-burning oven, and comforting favorites like a 12-oz Angus New York strip frites and our signature Wagyu burger. Thoughtful global influences weave through the menu, reflecting our belief that great food knows no borders.

More than a restaurant, Jolie is a place to relax, connect, and celebrate. Whether it’s a romantic date night, a late-afternoon glass of wine, or dinner with friends, we aim to make every visit feel welcoming, effortless, and worth returning to.
